Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease.
- In a large bowl, toss diced sweet potatoes with olive oil, garlic, salt, pepper, and thyme until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, stirring once halfway through, until golden and tender.
- Remove from oven and immediately sprinkle with Parmesan cheese while hot. Toss gently to coat.
- Garnish with fresh parsley if desired and serve warm.
