Description

This Roasted Carrots with Whipped Feta recipe features tender, caramelized carrots roasted to perfection and served atop creamy whipped feta. Drizzled with hot honey and garnished with crunchy pistachios and fresh herbs, it’s a vibrant and flavorful dish perfect as a side or appetizer.

Ingredients

Scale

Carrots

  • 1 1/2 pounds small to medium carrots
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper

Whipped Feta

  • Approximately 8 ounces feta cheese (crumbled)
  • 2 tablespoons Greek yogurt or cream cheese (optional, for creaminess)
  • 1-2 tablespoons olive oil (to whip)
  • Fresh lemon juice to taste

Toppings & Garnish

  • Hot honey or regular honey, for drizzling
  • 1/4 cup chopped pistachios
  • Chopped fresh parsley, chives, and/or dill, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 425ºF (220ºC) and line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Carrots: Scrub the carrots thoroughly, remove the tops, and peel if desired. If the carrots are large, cut them in half lengthwise for even roasting. Place them on the prepared baking sheet.
  3. Season Carrots: Drizzle the carrots with extra-virgin olive oil and toss to coat evenly. Sprinkle with fresh thyme, kosher salt, and cracked black pepper for flavor.
  4. Roast Carrots: Roast the seasoned carrots in the preheated oven for 18 to 27 minutes, depending on their size. Toss them halfway through roasting to ensure even caramelization. They should be fork tender and golden on the outside when done.
  5. Make Whipped Feta: While the carrots roast, combine crumbled feta cheese with Greek yogurt or cream cheese (if using), olive oil, and a splash of lemon juice in a food processor or blender. Blend until smooth and creamy with a whipped texture.
  6. Assemble the Dish: Spread the whipped feta evenly on a large serving platter. Arrange the roasted carrots on top of the feta layer.
  7. Garnish and Serve: Drizzle hot honey or regular honey over the carrots and feta. Sprinkle with chopped pistachios and fresh herbs like parsley, chives, or dill for color and flavor. Serve immediately and enjoy!

Notes

  • Adjust roasting time based on carrot size for optimal tenderness and caramelization.
  • You can make whipped feta ahead and refrigerate; bring to room temperature before serving for best texture.
  • Hot honey adds a spicy sweetness but can be substituted with regular honey for a milder flavor.
  • Use fresh herbs according to preference or seasonal availability for garnish.
