- 1 cup cottage cheese
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tbsp olive oil or melted butter (optional, for brushing)

Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine cottage cheese and eggs. Mix until well blended.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Add dry ingredients to wet mixture and stir until a soft dough forms. Do not overmix.
- Scoop dough into 6–8 mounds on the prepared baking sheet. Shape lightly into rounds.
- Brush tops with olive oil or butter if desired, and sprinkle with sesame seeds or herbs.
- Bake for 18–22 minutes, or until golden brown and firm to the touch.
- Cool slightly before serving warm or at room temperature.
