Pumpkin Cream

- 8 oz mascarpone cheese (softened)
- 1 ½ cups heavy whipping cream

- 1 cup strong brewed coffee or espresso (cooled)
- Optional: 2 tablespoons coffee liqueur
- Cocoa powder or cinnamon for dusting

Instructions
- Prepare Pumpkin Mixture: In a large bowl, whisk together pumpkin purée, brown sugar, pumpkin pie spice, cinnamon, and vanilla extract until the mixture is smooth.
- Add Mascarpone: Incorporate the softened mascarpone cheese into the pumpkin mixture and blend until well combined and creamy.
- Whip Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream gently into the pumpkin-mascarpone mixture to create a smooth and airy cream.
- Prepare Coffee Dip: In a shallow dish, combine the cooled coffee or espresso with coffee liqueur if using.
- Layer Ladyfingers: Quickly dip each ladyfinger into the coffee mixture (do not soak them), then arrange a layer in the bottom of a 9×9-inch or trifle dish.
- Assemble Layers: Spread half of the pumpkin cream mixture over the ladyfingers. Repeat by dipping remaining ladyfingers and layering them on top, followed by the remaining pumpkin cream.
- Chill: Cover the dish and refrigerate for at least 4 hours or preferably overnight to allow the flavors to meld and the dessert to set properly.
