Instructions

  1. Prepare Pumpkin Mixture: In a large bowl, whisk together pumpkin purée, brown sugar, pumpkin pie spice, cinnamon, and vanilla extract until the mixture is smooth.
  2. Add Mascarpone: Incorporate the softened mascarpone cheese into the pumpkin mixture and blend until well combined and creamy.
  3. Whip Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream gently into the pumpkin-mascarpone mixture to create a smooth and airy cream.
  4. Prepare Coffee Dip: In a shallow dish, combine the cooled coffee or espresso with coffee liqueur if using.
  5. Layer Ladyfingers: Quickly dip each ladyfinger into the coffee mixture (do not soak them), then arrange a layer in the bottom of a 9×9-inch or trifle dish.
  6. Assemble Layers: Spread half of the pumpkin cream mixture over the ladyfingers. Repeat by dipping remaining ladyfingers and layering them on top, followed by the remaining pumpkin cream.
