Description

Porcupine meatballs are tender beef meatballs mixed with rice and simmered in a savory tomato sauce, creating a hearty and comforting dish.


Ingredients

  • 1 pound ground beef
  • 1/2 cup uncooked long-grain white rice
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1 (15 oz) can tomato sauce
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil (optional for browning)

Instructions

  1. In a large bowl, combine ground beef, uncooked rice, onion, garlic, salt, pepper, and oregano. Mix until just combined.
  2. Shape mixture into 1 1/2-inch meatballs.
  3. (Optional) In a large skillet, heat olive oil over medium heat and lightly brown meatballs on all sides.
  4. In a separate bowl, mix together tomato sauce, water, and Worcestershire sauce. Pour over meatballs in the skillet or in a baking dish.
  5. Cover and simmer on low heat for 45 minutes on the stove, or bake at 350°F (175°C) for 45-50 minutes, until meatballs are cooked through and rice is tender.
  6. Spoon sauce over meatballs and serve hot.

Notes

  • For extra flavor, add a pinch of chili flakes or Italian seasoning to the sauce.
  • Can be made ahead and reheated — the flavors improve overnight.
  • Serve with mashed potatoes, pasta, or steamed vegetables for a full meal.
