Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper cups to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, Italian seasoning, garlic powder, salt, and crushed red pepper flakes if using, ensuring the spices are evenly distributed.
  3. Combine Wet Ingredients: In a separate bowl, whisk the whole milk and large egg until well blended.
  4. Combine Wet and Dry Mixtures: Pour the milk and egg mixture into the dry ingredients and stir gently until just combined; avoid overmixing to keep the puffs light.
  5. Fold in Cheese and Toppings: Carefully fold in shredded mozzarella, grated Parmesan, pepperoni, and any optional additions like bell pepper or cooked sausage or mushrooms to the batter.
