Description

Pizza Enchiladas combine the bold flavors of Italian pizza with the comforting format of Mexican enchiladas. Tortillas are filled with a cheesy mixture of mozzarella, pepperoni, Italian sausage, olives, and bell peppers, all rolled up and baked with pizza sauce and Italian seasonings for a delicious fusion main course that’s perfect for an easy weeknight meal.

  • 8 flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices

Sauce and Seasoning

  • 1 (15-ounce) can pizza sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder

  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat and Prepare Baking Dish – Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking and for easy clean-up.
  2. Mix Filling Ingredients – In a large bowl, combine the shredded mozzarella cheese, mini pepperoni slices, crumbled cooked Italian sausage, sliced black olives, and diced green bell pepper. Mix until evenly distributed.
  3. Warm Tortillas – Slightly warm the flour tortillas in the microwave or on a skillet just until pliable to make rolling them much easier without tearing.
  4. Assemble Enchiladas – Spread a spoonful of pizza sauce inside each warmed tortilla. Add a generous scoop of the prepared filling mixture on top of the sauce. Roll up each tortilla tightly and place seam-side down in the prepared baking dish.
  5. Add Sauce and Seasoning – Pour the remaining pizza sauce evenly over the arranged enchiladas. Sprinkle Italian seasoning, garlic powder, red pepper flakes (if using), and grated Parmesan cheese evenly over the top.
  6. Bake Covered – Cover the baking dish with foil and bake for 20 minutes to allow flavors to meld and cheeses to melt thoroughly.
  7. Finish Baking Uncovered – Remove the foil and bake for an additional 10 minutes until the enchiladas are bubbly and golden on top.
