Filling and Tortillas
- 8 flour tortillas
- 2 cups shredded mozzarella cheese
- 1/2 cup mini pepperoni slices
- 1/2 cup cooked Italian sausage, crumbled
- 1/4 cup sliced black olives
- 1/4 cup diced green bell pepper
Sauce and Seasoning
- 1 (15-ounce) can pizza sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons grated Parmesan cheese
Garnish
- Chopped fresh basil or parsley (optional)
Instructions
- Preheat and Prepare Baking Dish – Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking and for easy clean-up.
- Mix Filling Ingredients – In a large bowl, combine the shredded mozzarella cheese, mini pepperoni slices, crumbled cooked Italian sausage, sliced black olives, and diced green bell pepper. Mix until evenly distributed.
- Warm Tortillas – Slightly warm the flour tortillas in the microwave or on a skillet just until pliable to make rolling them much easier without tearing.
- Assemble Enchiladas – Spread a spoonful of pizza sauce inside each warmed tortilla. Add a generous scoop of the prepared filling mixture on top of the sauce. Roll up each tortilla tightly and place seam-side down in the prepared baking dish.
- Add Sauce and Seasoning – Pour the remaining pizza sauce evenly over the arranged enchiladas. Sprinkle Italian seasoning, garlic powder, red pepper flakes (if using), and grated Parmesan cheese evenly over the top.
- Bake Covered – Cover the baking dish with foil and bake for 20 minutes to allow flavors to meld and cheeses to melt thoroughly.
- Finish Baking Uncovered – Remove the foil and bake for an additional 10 minutes until the enchiladas are bubbly and golden on top.
- Garnish and Serve – Sprinkle with chopped fresh basil or parsley if desired. Serve hot and enjoy your delicious pizza enchiladas!
