Description

Pesto Grilled Cheese is a flavorful twist on the classic sandwich, combining gooey melted cheese and vibrant pesto between golden, crispy slices of bread—perfect for a quick lunch or comfort food fix.


Ingredients

  • 4 slices sourdough or sandwich bread
  • 2 tbsp butter, softened
  • 2 tbsp pesto (store-bought or homemade)
  • 4 slices mozzarella or provolone cheese
  • 2 tbsp grated Parmesan cheese (optional)

Instructions

  1. Spread butter on one side of each bread slice.
  2. Spread pesto on the unbuttered side of two slices.
  3. Layer mozzarella cheese (and Parmesan if using) over the pesto-covered sides.
  4. Top with the remaining bread slices, buttered side out, to form sandwiches.
  5. Heat a skillet over medium heat. Grill sandwiches for 3–4 minutes per side, or until bread is golden and cheese is melted.
  6. Slice and serve warm.
