- 4 slices sourdough or sandwich bread
- 2 tbsp butter, softened
- 2 tbsp pesto (store-bought or homemade)
- 4 slices mozzarella or provolone cheese
- 2 tbsp grated Parmesan cheese (optional)
Instructions
- Spread butter on one side of each bread slice.
- Spread pesto on the unbuttered side of two slices.
- Layer mozzarella cheese (and Parmesan if using) over the pesto-covered sides.
- Top with the remaining bread slices, buttered side out, to form sandwiches.
- Heat a skillet over medium heat. Grill sandwiches for 3–4 minutes per side, or until bread is golden and cheese is melted.
- Slice and serve warm.
