Puff Pastry Base
- 1 sheet puff pastry (thawed)
Toppings
- 1/3 cup basil pesto
- 1 cup fresh mozzarella (sliced or torn)
- 1 cup cherry tomatoes (halved)
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1/4 cup fresh basil leaves (torn)
- Balsamic glaze for drizzling (optional)
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
- Prepare the puff pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out creases and slightly enlarge the sheet. Transfer the rolled pastry onto the prepared baking sheet.
- Score and prick the pastry: Use a knife to score a 1/2-inch border around the edges of the pastry, taking care not to cut all the way through. Then, use a fork to prick the center of the pastry lightly to avoid excessive puffing during baking.
- Add the toppings: Spread the basil pesto evenly over the center area of the pastry, avoiding the edges. Next, arrange the mozzarella slices and halved cherry tomatoes over the pesto. Drizzle the olive oil on top and season with salt and black pepper to taste.
- Bake: Place the baking sheet in the preheated oven and bake for 18–22 minutes, or until the pastry is puffed up and golden brown.
- Finish and serve: Remove the pastry pizza from the oven and allow it to cool slightly. Top with torn fresh basil leaves and drizzle with balsamic glaze if desired. Slice and serve warm.
Notes
- To prevent sogginess, pat the mozzarella dry before layering it on the pastry.
- You can use either store-bought or homemade basil pesto depending on your preference.
