Description

This Pesto Caprese Puff Pastry Pizza is a light, flaky, and flavor-packed twist on traditional pizza. Featuring a golden puff pastry base topped with creamy basil pesto, juicy cherry tomatoes, fresh mozzarella, and a drizzle of balsamic glaze, it’s an easy yet impressive dish perfect for appetizers, lunch, or a light dinner. Ready in under 30 minutes, it’s ideal for entertaining or quick meals.

Ingredients

Scale

Base and Sauce

  • 1 sheet puff pastry (thawed)
  • ¼ cup basil pesto

Toppings

  • 1 cup cherry tomatoes (halved)
  • 6 oz fresh mozzarella (sliced or torn)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Garnish

  • Fresh basil leaves
  • 1–2 tbsp balsamic glaze (for drizzling)

Other

  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare the Puff Pastry: Lightly flour a clean surface and roll out the puff pastry slightly to even it out. Transfer it carefully to the prepared baking sheet.
  3. Score the Border and Apply Egg Wash: Using a sharp knife, lightly score a ½-inch border around the edges of the puff pastry without cutting all the way through. Brush the edges with the beaten egg to help create a golden, glossy crust when baked.
  4. Add the Pesto: Evenly spread the basil pesto inside the scored border, ensuring full coverage but leaving the edges clear for the puff to rise.
  5. Arrange Toppings: Place the sliced or torn fresh mozzarella over the pesto, followed by the halved cherry tomatoes. Drizzle the olive oil over the toppings, then season with salt and pepper to enhance the flavors.
  6. Bake: Place the baking sheet in the preheated oven and bake for 20–22 minutes, or until the pastry is puffed up and golden brown on the edges.
  7. Cool and Garnish: Remove from the oven and allow the pizza to cool slightly so the cheese sets. Finish by garnishing with fresh basil leaves and drizzling with balsamic glaze before serving.

Notes

  • For an extra kick, sprinkle red pepper flakes or grated Parmesan cheese on top before baking.
  • You can use store-bought or homemade basil pesto based on your preference and availability.
  • This pizza is best enjoyed fresh out of the oven but can be reheated in the oven to maintain crispness.
