- 1/2 cup (115 grams) unsalted butter, cut into pieces
- 1/2 cup (120 ml) milk
- 3/4 cup (190 grams) creamy peanut butter
- 1 teaspoon pure vanilla extract

- 1 and 3/4 cups (350 grams) granulated sugar
- 3 and 1/4 cups (325 grams) quick-cooking oats
Instructions
- Prepare Ingredients and Workspace: Gather and measure all ingredients accurately. Line two large baking sheets with parchment paper or, if heat-resistant, spread a large sheet of parchment paper on your countertop for cooling the cookies later.
- Cook Sugar Mixture: In a medium saucepan, combine butter, granulated sugar, and milk. Heat over medium heat, stirring frequently until the butter melts and the mixture is well combined. Bring it to a full rolling boil, where bubbles cover the surface and are vigorous, then boil undisturbed for exactly 60 seconds.
- Combine Peanut Butter and Oats: Remove the saucepan from heat. Immediately stir in the creamy peanut butter and vanilla extract until smooth and fully incorporated. Add the quick-cooking oats and stir thoroughly to coat all oats evenly with the mixture.
- Form Cookies: Using a 1.5 tablespoon cookie scoop or spoon, drop portions of the mixture onto the prepared parchment paper. Flatten each portion slightly with the back of the scoop or spoon for even cookies.
- Cool and Set: Let the cookies cool at room temperature for 45 minutes to 1 hour or until firm. The cookies will become firmer the longer they sit. Once set, serve and enjoy!

- Be sure not to stir while boiling the mixture for 60 seconds to ensure proper texture.
- If you prefer crunchy oats, you can substitute quick-cooking oats with old-fashioned rolled oats, but the texture will be different.
