Perfect for a healthy dessert or snack, they are easy to prepare and freeze into satisfying bars.
Ingredients
Scale
Base
- 2 cups plain Greek yogurt
- ½ cup creamy peanut butter
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
Toppings
- ½ cup granola
- ¼ cup mini chocolate chips
- 2 tablespoons chopped peanuts (optional)
Instructions
- Prepare the dish: Line an 8×8-inch baking dish with parchment paper, leaving some overhang on the sides to make it easier to lift out the frozen bars later.
- Mix the yogurt base: In a medium bowl, combine the Greek yogurt, creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and all ingredients are well blended.
- Spread the mixture: Pour the yogurt mixture into the prepared dish and spread it evenly to cover the bottom uniformly.
- Add toppings: Sprinkle the granola, mini chocolate chips, and chopped peanuts (if using) evenly over the yogurt layer. Gently press them into the surface so they stick.
- Freeze: Place the dish in the freezer for at least 3 to 4 hours, or until the yogurt mixture is completely firm and frozen.
- Serve: Once frozen, carefully lift the block out using the parchment paper overhang. Cut into 9 bars and store them in an airtight container in the freezer until ready to eat.
Notes
- Use flavored yogurt for added sweetness or swirl in a bit of jam for a peanut butter and jelly twist.
- For a nut-free version, substitute sunflower seed butter for peanut butter and omit the chopped peanuts.
- Make sure to use gluten-free granola if you want to keep this recipe gluten-free.
