Description

These Peanut Butter Frozen Yogurt Bars are a delicious, no-bake treat that combines creamy Greek yogurt with peanut butter, honey, and a crunchy topping of granola, chocolate chips, and chopped peanuts. Perfect for a healthy dessert or snack, they are easy to prepare and freeze into satisfying bars.

Ingredients

Scale

Base

  • 2 cups plain Greek yogurt
  • ½ cup creamy peanut butter
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • ½ cup granola
  • ¼ cup mini chocolate chips
  • 2 tablespoons chopped peanuts (optional)

Instructions

  1. Prepare the dish: Line an 8×8-inch baking dish with parchment paper, leaving some overhang on the sides to make it easier to lift out the frozen bars later.
  2. Mix the yogurt base: In a medium bowl, combine the Greek yogurt, creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and all ingredients are well blended.
  3. Spread the mixture: Pour the yogurt mixture into the prepared dish and spread it evenly to cover the bottom uniformly.
  4. Add toppings: Sprinkle the granola, mini chocolate chips, and chopped peanuts (if using) evenly over the yogurt layer. Gently press them into the surface so they stick.
  5. Freeze: Place the dish in the freezer for at least 3 to 4 hours, or until the yogurt mixture is completely firm and frozen.
  6. Serve: Once frozen, carefully lift the block out using the parchment paper overhang. Cut into 9 bars and store them in an airtight container in the freezer until ready to eat.

Notes

  • Use flavored yogurt for added sweetness or swirl in a bit of jam for a peanut butter and jelly twist.
  • For a nut-free version, substitute sunflower seed butter for peanut butter and omit the chopped peanuts.
  • Make sure to use gluten-free granola if you want to keep this recipe gluten-free.
