  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup rolled oats (optional)
  • 2 cups semi-sweet chocolate chips

For the Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9×9 or 9×13-inch baking pan.
  2. In a large bowl, cream together the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until smooth.
  4. Stir in the baking soda and salt. Mix in the oats (if using) and chocolate chips.
  5. In a separate bowl, beat the cream cheese, sugar, egg, and vanilla until smooth to make the cheesecake layer.
  6. Press about two-thirds of the cookie dough evenly into the bottom of the prepared pan.
  7. Pour the cheesecake mixture over the cookie dough base and spread evenly.
  8. Crumble the remaining cookie dough over the cheesecake layer.
  9. Bake for 35–40 minutes or until the top is golden and the cheesecake layer is set.
  10. Let cool at room temperature, then refrigerate for 2–3 hours before cutting into bars.

Notes

  • Use a 9×9-inch pan for thicker bars or a 9×13-inch pan for thinner ones with more servings.
  • Rolled oats add a nice chewy texture but can be omitted.
  • You can add mini peanut butter cups or drizzle melted chocolate over the top for extra indulgence.
