Peanut Butter Mixture
- 1 cup creamy peanut butter
- ¼ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1½ cups powdered sugar
- 1½ cups chocolate Rice Krispies cereal
Chocolate Coating
- 1½ cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or vegetable shortening
Instructions
- Make the peanut butter dough: In a large mixing bowl, combine the creamy peanut butter, softened butter, and vanilla extract. Mix until the mixture is smooth and creamy with no lumps.
- Add powdered sugar: Gradually add the powdered sugar to the peanut butter mixture, stirring continuously until fully incorporated and a thick dough forms.
- Fold in Rice Krispies: Gently fold in the chocolate Rice Krispies cereal, taking care to mix just enough to combine without crushing the cereal too much, maintaining its crunch.
- Form balls: Line a baking sheet with parchment paper. Roll the mixture into 1-inch diameter balls and place them evenly spaced on the prepared sheet.
- Chill balls: Refrigerate the shaped balls for at least 30 minutes to firm up before coating with chocolate.
- Melt chocolate coating: While the balls chill, melt the semi-sweet chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 30-second increments, stirring well between each until the chocolate is smooth and fully melted.
- Dip balls in chocolate: Using a fork or dipping tool, dip each chilled peanut butter ball into the melted chocolate, allowing excess chocolate to drip off before placing back onto the parchment-lined baking sheet.
- Set the chocolate: Return the coated balls to the refrigerator and chill for an additional 20–30 minutes until the chocolate coating is firm and set.
