Description
Patriotic Whoopie Pies are festive red, white, and blue sandwich treats made with soft cake-like cookies and a fluffy marshmallow or buttercream filling. Perfect for 4th of July or other patriotic celebrations.

- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 cup buttermilk
- 1 tsp vanilla extract
- Red and blue gel food coloring
- Sprinkles (optional)
- For the filling:
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 jar (7 oz) marshmallow creme
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, beat butter and sugar until fluffy. Add egg and vanilla extract, mixing well.
- Gradually mix in the flour mixture alternately with buttermilk until smooth.
- Divide the batter into three portions. Leave one plain, color one red, and the other blue using gel food coloring.
- Drop spoonfuls of batter onto prepared baking sheets, spacing them apart. Bake for 10–12 minutes or until set. Cool completely.
- To make the filling, beat butter, powdered sugar, marshmallow creme, and vanilla until fluffy.
- Spread filling on the flat side of half the cookies. Top with remaining cookies to form sandwiches.
- Roll edges in patriotic sprinkles, if desired. Chill before serving for best texture.
Notes
- Use gel food coloring for more vibrant colors without thinning the batter.
- Store assembled whoopie pies in an airtight container in the fridge for up to 3 days.
- You can make the cookies a day ahead and fill them the next day.
