Description

Patriotic Whoopie Pies are festive red, white, and blue sandwich treats made with soft cake-like cookies and a fluffy marshmallow or buttercream filling. Perfect for 4th of July or other patriotic celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • Red and blue gel food coloring
  • Sprinkles (optional)
  • For the filling:
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 jar (7 oz) marshmallow creme
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add egg and vanilla extract, mixing well.
  4. Gradually mix in the flour mixture alternately with buttermilk until smooth.
  5. Divide the batter into three portions. Leave one plain, color one red, and the other blue using gel food coloring.
  6. Drop spoonfuls of batter onto prepared baking sheets, spacing them apart. Bake for 10–12 minutes or until set. Cool completely.
  7. To make the filling, beat butter, powdered sugar, marshmallow creme, and vanilla until fluffy.
  8. Spread filling on the flat side of half the cookies. Top with remaining cookies to form sandwiches.
  9. Roll edges in patriotic sprinkles, if desired. Chill before serving for best texture.

Notes

  • Use gel food coloring for more vibrant colors without thinning the batter.
  • Store assembled whoopie pies in an airtight container in the fridge for up to 3 days.
  • You can make the cookies a day ahead and fill them the next day.
