Description

Pastina Soup is a simple and comforting Italian-style soup made with tiny star-shaped pasta simmered in savory broth. It’s the perfect easy recipe for when you’re feeling under the weather or just want something cozy and nourishing — like a warm hug in a bowl!


Ingredients

6 cups chicken broth (or vegetable broth)

3/4 cup pastina (tiny star pasta or similar small pasta)

1 tbsp butter

1 egg (optional, for egg drop style)

1/4 cup grated Parmesan cheese

Salt and black pepper (to taste)

Fresh parsley (optional, for garnish)


Instructions

  1. Heat the broth: In a medium saucepan, bring the broth to a boil over medium-high heat.

  2. Cook the pastina: Stir in the pastina and reduce heat to a simmer. Cook for about 5–6 minutes, or until the pasta is tender, stirring occasionally.

  3. Add butter and cheese: Stir in the butter and Parmesan cheese until melted and combined.

  4. Optional egg step: For extra richness, whisk the egg in a small bowl. Slowly drizzle it into the hot soup while stirring gently to create egg ribbons.

  5. Season and serve: Add salt and pepper to taste. Ladle into bowls and top with more Parmesan and chopped parsley if desired.


Notes

  • You can add shredded rotisserie chicken, spinach, or tiny veggies to bulk it up.

  • Swap in orzo or acini di pepe if you don’t have pastina.

 

  • For a creamier version, stir in a splash of milk or cream at the end.
