Description

This homemade version of the Panera Fuji Apple Salad is fresh, crisp, and full of flavor. It features mixed greens, juicy chicken, dried apple chips, sweet tomatoes, crunchy pecans, and a tangy apple vinaigrette. It’s a perfect light lunch or dinner and comes together in just minutes!


Ingredients

For the Salad:

  • 6 cups mixed salad greens

  • 1 cup grilled chicken breast, sliced (about 1 small breast)

  • 1/2 cup apple chips (store-bought or homemade)

  • 1/2 cup grape tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup crumbled Gorgonzola or feta cheese

  • 1/4 cup candied pecans or walnuts

  • Optional: sliced fresh apples for extra crunch

For the Apple Vinaigrette:

 

  • 1/4 cup apple cider vinegar

  • 2 tablespoons olive oil

  • 1 tablespoon honey

  • 1 tablespoon Dijon mustard

  • 1 tablespoon apple juice (or more to taste)

  • Salt and pepper, to taste


Instructions

In a large bowl, combine salad greens, chicken, apple chips, tomatoes, red onion, cheese, and nuts.

 

In a small bowl or jar, whisk together all vinaigrette ingredients until smooth.

 

Drizzle dressing over the salad just before serving and toss gently to combine.

 

Serve immediately and enjoy!


Notes

  • Swap the chicken for tofu or tempeh to make it vegetarian.

  • You can make the vinaigrette ahead of time and store it in the fridge for up to 5 days.
