Description

Crispy, homemade onion cheddar chips made from thinly sliced russet potatoes baked to golden perfection, seasoned with onion and garlic powders, and topped with melted sharp cheddar cheese. These savory snacks are perfect for a flavorful and easy-to-make treat, garnished with fresh chives or green onions for an extra burst of freshness.

Ingredients

Scale

Potato Chips

  • 2 large russet potatoes, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Topping & Garnish

  • 1 cup shredded sharp cheddar cheese
  • Chopped chives or green onions for garnish (optional)

Instructions

  1. Preheat oven and prepare baking sheets: Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper to prevent sticking and for easy cleanup.
  2. Toss potatoes with seasoning: In a large bowl, combine the thinly sliced potatoes with olive oil, onion powder, garlic powder, salt, and black pepper. Toss well to coat all slices evenly with the seasoning.
  3. Arrange potatoes and bake: Lay the seasoned potato slices in a single layer on the prepared baking sheets, ensuring they do not overlap to help them crisp up evenly. Bake in the preheated oven for 15 to 20 minutes, flipping the slices once halfway through cooking to ensure both sides become golden and crispy.
  4. Add cheddar cheese and finish baking: Remove the baking sheets from the oven and immediately sprinkle the hot chips evenly with the shredded cheddar cheese. Return the sheets to the oven and bake for an additional 2 to 3 minutes, or until the cheese has melted and is bubbly.
  5. Cool and garnish: Let the chips cool slightly to firm up, then garnish with chopped chives or green onions if desired. Serve the chips warm or at room temperature for the best flavor and crunch.

Notes

  • For extra crispy chips, soak the potato slices in cold water for 30 minutes before baking to remove excess starch. Be sure to pat them completely dry before tossing with oil and seasoning.
  • Sweet potatoes can be substituted for russet potatoes to create a sweeter variation of these chips.
  • These chips are best enjoyed fresh to maintain their maximum crunch.
