Ingredients
Scale
Sausage
- 14 ounces smoked sausage (sliced into ½-inch rounds)
Vegetables & Seasoning
- 2 pounds yellow potatoes (Yukon Gold recommended), cut into 1-inch chunks
- 1 pound fresh green beans, rinsed and trimmed
- ½ teaspoon paprika (smoked paprika preferred)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ¼ teaspoon black pepper
Other Ingredients
- 2 tablespoons butter
- 1 ½ cups low-sodium chicken broth
- Cooking spray (for pan)
Instructions
- Prep Ingredients: Slice the smoked sausage into ½-inch rounds. Dice the onion if using (note: onion was mentioned in prep but not in final ingredients, so omitted). Cut the potatoes into 1-inch chunks.
- Mix Seasoning: In a small bowl, combine paprika, garlic powder, onion powder, salt, and black pepper to create the seasoning blend.
- Brown Sausage: Spray a Dutch oven or deep pan with cooking spray and heat over medium-high heat. Add the sliced sausage and cook, stirring occasionally, for about 4-5 minutes until browned. Remove the sausage and set it aside.
- Sauté Potatoes: Add butter to the same pot and keep the heat at medium-high. Add the potatoes and half of the seasoning mixture. Cook the potatoes, stirring occasionally, until they begin to brown, approximately 5-6 minutes.
- Add Green Beans and Broth: Add the rinsed and trimmed green beans to the pot, followed by the remaining seasoning mixture. Stir to combine with the potatoes. Pour the low-sodium chicken broth over the vegetables.
- Cook: Cover the pot with a lid, reduce heat to medium, and let everything simmer for 15 minutes or until the potatoes and green beans are tender.
- Combine and Serve: Return the browned sausage to the pot, stir everything well to combine flavors, and serve hot.
Notes
- Use smoked paprika for deeper smoky flavor but regular paprika works fine.
- Yukon Gold potatoes are recommended as they hold shape well during cooking and have a creamy texture.
- Low-sodium chicken broth keeps the salt content controlled; adjust salt to taste.
- To make this dish gluten-free, ensure the sausage used does not contain gluten.
- For a spicier twist, add red pepper flakes with the seasoning.
