Description

One-Pot Smoked Sausage and Rice is a flavorful and satisfying meal made with smoky sausage, tender rice, and vegetables—all cooked together for easy cleanup and hearty comfort.


Ingredients

  • 14 ounces smoked sausage, sliced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/2 cup frozen peas (optional)
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add sliced smoked sausage and cook until browned, about 4–5 minutes. Remove and set aside.
  2. In the same pot, add onion and bell pepper. Sauté for 3–4 minutes until softened. Add garlic and cook for 1 minute more.
  3. Stir in paprika, oregano, and black pepper. Add rice and cook for 1–2 minutes, stirring to coat with the seasonings.
  4. Add chicken broth, diced tomatoes (with juice), and browned sausage. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
  6. Stir in frozen peas (if using) and let sit for 2–3 minutes. Taste and adjust salt as needed.
  7. Garnish with fresh parsley and serve hot.

  • Use turkey or chicken sausage for a leaner option.
  • Brown rice can be used but will require a longer cooking time and more broth.
  • Customize with other vegetables like zucchini or corn.
