- 4 boneless skinless chicken breasts
- 2 tablespoons butter
- Salt and pepper, to taste
- 2 teaspoons Italian seasoning, divided
- 1 cup uncooked white rice
- 2 1/4 cups chicken broth (low sodium preferred)
- Juice of 1 lemon
- Fresh parsley or cilantro, for garnish
- Lemon wedges, for serving
Instructions
- In a large skillet, melt butter over medium-high heat. Season chicken with salt, pepper, and 1 teaspoon of Italian seasoning. Sear each side for 1-2 minutes until lightly browned, then remove and set aside.
- Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the skillet. Stir to combine.
- Place the chicken breasts back on top of the rice mixture. Cover the skillet, reduce heat to medium-low, and let simmer for 20-25 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let sit for 5 minutes. Garnish with chopped parsley or cilantro and serve with lemon wedges.
Notes
- For bone-in chicken, extend searing time and ensure internal temperature reaches 165°F.
- Brown rice can be used but will increase cooking time to 30-35 minutes.
- Add vegetables like peas, carrots, or chopped bell peppers for variety.
- Leftovers store well in the fridge for 3 days or can be frozen for up to 3 months.
