Description

A flavorful and easy-to-make one-pot meal where juicy chicken breasts are simmered with lemon-infused herb rice, perfect for a wholesome weeknight dinner.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 2 teaspoons Italian seasoning, divided
  • 1 cup uncooked white rice
  • 2 1/4 cups chicken broth (low sodium preferred)
  • Juice of 1 lemon
  • Fresh parsley or cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a large skillet, melt butter over medium-high heat. Season chicken with salt, pepper, and 1 teaspoon of Italian seasoning. Sear each side for 1-2 minutes until lightly browned, then remove and set aside.
  2. Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the skillet. Stir to combine.
  3. Place the chicken breasts back on top of the rice mixture. Cover the skillet, reduce heat to medium-low, and let simmer for 20-25 minutes or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let sit for 5 minutes. Garnish with chopped parsley or cilantro and serve with lemon wedges.

Notes

  • For bone-in chicken, extend searing time and ensure internal temperature reaches 165°F.
  • Brown rice can be used but will increase cooking time to 30-35 minutes.
  • Add vegetables like peas, carrots, or chopped bell peppers for variety.
  • Leftovers store well in the fridge for 3 days or can be frozen for up to 3 months.
