Description

A healthy, low-carb dish made in one pan with shrimp, zucchini noodles, garlic, and lemon—perfect for a quick, flavorful meal.


Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 4 medium zucchini, spiralized
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 tsp red pepper flakes (optional)
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and red pepper flakes; sauté for 30 seconds.
  3. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink.
  4. Remove shrimp and set aside.
  5. Add zucchini noodles to the same pan and cook for 2–3 minutes until tender-crisp.
  6. Return shrimp to the pan, add lemon juice and zest, and toss to combine.
  7. Remove from heat, top with parsley and Parmesan if using, and serve.

Notes

  • Do not overcook zucchini noodles to avoid sogginess.
  • Use a spiralizer or julienne peeler for noodles.
  • Great with a splash of white wine or broth for more depth.
  • Can be made dairy-free by skipping Parmesan.
