- 1 lb raw shrimp, peeled and deveined
- 4 medium zucchini, spiralized
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 tsp red pepper flakes (optional)
- Zest and juice of 1 lemon
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
- 2 tbsp grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and red pepper flakes; sauté for 30 seconds.
- Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink.
- Remove shrimp and set aside.
- Add zucchini noodles to the same pan and cook for 2–3 minutes until tender-crisp.
- Return shrimp to the pan, add lemon juice and zest, and toss to combine.
- Remove from heat, top with parsley and Parmesan if using, and serve.
Notes
- Do not overcook zucchini noodles to avoid sogginess.
- Use a spiralizer or julienne peeler for noodles.
- Great with a splash of white wine or broth for more depth.
- Can be made dairy-free by skipping Parmesan.
