- 1 lb kielbasa sausage, sliced
- 1 lb baby potatoes, halved
- 1 medium onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Salt to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes and onions with olive oil and seasonings.
- Spread the potatoes and onions on a large baking sheet in a single layer.
- Bake for 15 minutes.
- Remove from oven, add kielbasa slices, and mix gently.
- Return to oven and bake for another 15–20 minutes or until potatoes are golden and tender.
- Garnish with chopped parsley if desired and serve warm.
Notes
- Use turkey kielbasa for a lighter version.
- Add bell peppers or zucchini for extra veggies.
- Great for meal prep—stores well in the fridge for 3-4 days.
