These No-Bake Coconut Cream Balls are a deliciously simple treat combining shredded sweetened coconut with condensed milk and a hint of vanilla. Instructions
- Prepare the Coconut Mixture: In a mixing bowl, combine 2 cups of shredded sweetened coconut, 1/2 cup of sweetened condensed milk, 1 teaspoon of vanilla extract or coconut extract, and 1/4 teaspoon of salt. Stir well until the ingredients are fully incorporated. Cover and refrigerate the mixture for 30 minutes to make it easier to handle.
- Shape the Balls: Once chilled, scoop out 1-tablespoon portions of the coconut mixture and roll each portion between your palms to form smooth, round balls. Arrange the balls on a baking sheet lined with parchment paper to prevent sticking.
- Optional Coating: For added texture and flavor, roll the coconut balls in additional shredded coconut to coat them lightly, or dip them individually into melted semi-sweet or dark chocolate. Allow any excess chocolate to drip off before placing the coated balls back on the parchment-lined tray.
- Chill: Place the baking sheet with the coconut cream balls in the refrigerator and chill for 1 hour or until the balls are firm and set. This ensures the balls hold their shape when served.
