- 1 cup salted butter
- 1/2 cup light brown sugar, packed
- 1/4 teaspoon fine sea salt
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1 cup semisweet chocolate chips
- 1 cup creamy peanut butter
Instructions
- Line an 8×8-inch baking dish with parchment paper.
- Melt the butter in a saucepan over medium heat. Stir in brown sugar and sea salt until dissolved, then add vanilla extract.
- Lower the heat and stir in the oats. Cook for about 2 minutes until well combined.
- Reserve 2-3 tablespoons of the oat mixture for topping, and press the remaining into the prepared baking dish.
- Melt the chocolate chips and peanut butter together until smooth, using a microwave or stovetop method.
- Pour the chocolate-peanut butter mixture over the oat crust and spread evenly.
- Sprinkle the reserved oat mixture on top and lightly press it into the chocolate layer.
- Refrigerate for at least 2 hours until firm, then bring to room temperature before slicing into bars.
Notes
- Substitute with almond or sunflower seed butter if preferred.
- Use dairy-free alternatives for a vegan version.
- Keep refrigerated or frozen for longer shelf life.
