Description

Chewy no-bake oat bars with a rich chocolate and peanut butter layer, perfect for a quick, satisfying snack or dessert.


Ingredients

  • 1 cup salted butter
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 cup semisweet chocolate chips
  • 1 cup creamy peanut butter

Instructions

  1. Line an 8×8-inch baking dish with parchment paper.
  2. Melt the butter in a saucepan over medium heat. Stir in brown sugar and sea salt until dissolved, then add vanilla extract.
  3. Lower the heat and stir in the oats. Cook for about 2 minutes until well combined.
  4. Reserve 2-3 tablespoons of the oat mixture for topping, and press the remaining into the prepared baking dish.
  5. Melt the chocolate chips and peanut butter together until smooth, using a microwave or stovetop method.
  6. Pour the chocolate-peanut butter mixture over the oat crust and spread evenly.
  7. Sprinkle the reserved oat mixture on top and lightly press it into the chocolate layer.
  8. Refrigerate for at least 2 hours until firm, then bring to room temperature before slicing into bars.

Notes

  • Substitute with almond or sunflower seed butter if preferred.
  • Use dairy-free alternatives for a vegan version.
  • Keep refrigerated or frozen for longer shelf life.
