Description

These Mozzarella-Stuffed Soft Pretzels are a delicious twist on the classic pretzel, with gooey melted cheese inside a soft and chewy pretzel dough. Perfect for a savory snack or appetizer!

For the pretzel dough:

  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 package active dry yeast
  • 4 1/2 cups all-purpose flour
  • 4 tablespoons unsalted butter, melted

For the pretzel filling:

  • 8 ounces mozzarella cheese, cut into 1-inch cubes

For boiling and topping:

  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Coarse salt, for sprinkling

Instructions

  1. Make the pretzel dough: In a large mixing bowl, combine warm water, sugar, and salt. Sprinkle the yeast on top and let it sit for 5 minutes, until foamy. Add the flour and melted butter, then mix until the dough comes together.
  2. Fill the pretzels: Divide the dough into 8 equal pieces. Flatten each piece into a rectangle, place a cube of mozzarella in the center, and wrap the dough around the cheese, sealing tightly.
  3. Boil and bake: Boil water and baking soda in a large pot. Boil each pretzel for 30 seconds, then place on a baking sheet. Brush with egg wash, sprinkle with salt, and bake at 450°F for 12-15 minutes, until golden brown.
