- 1 package active dry yeast

For the pretzel filling:
- 8 ounces mozzarella cheese, cut into 1-inch cubes
For boiling and topping:
- 10 cups water
- 2/3 cup baking soda
- 1 large egg yolk beaten with 1 tablespoon water
- Coarse salt, for sprinkling
Instructions
- Make the pretzel dough: In a large mixing bowl, combine warm water, sugar, and salt. Sprinkle the yeast on top and let it sit for 5 minutes, until foamy. Add the flour and melted butter, then mix until the dough comes together.
- Fill the pretzels: Divide the dough into 8 equal pieces. Flatten each piece into a rectangle, place a cube of mozzarella in the center, and wrap the dough around the cheese, sealing tightly.
- Boil and bake: Boil water and baking soda in a large pot. Boil each pretzel for 30 seconds, then place on a baking sheet. Brush with egg wash, sprinkle with salt, and bake at 450°F for 12-15 minutes, until golden brown.
