Brownie Mix:
- 1 box brownie mix (plus eggs, oil, and water as directed)
Mint Fudge Layer:
- 1 (10 oz) package Andes crème de menthe candies (or mint chocolate chips)
- 1/2 cup sweetened condensed milk
- 1 cup semisweet chocolate chips
- 1/2 teaspoon peppermint extract
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan. Prepare the brownie batter according to package instructions.
- Make Mint Fudge: In a microwave-safe bowl, combine the semisweet chocolate chips and sweetened condensed milk. Microwave in 30-second intervals, stirring between each, until smooth and melted. Stir in the peppermint extract.
- Layer and Bake: Pour half of the brownie batter into the prepared pan and spread evenly. Layer the fudge mixture over the batter, then sprinkle with half of the chopped Andes mints. Spread the remaining brownie batter on top and smooth the surface. Top with the remaining mint candies. Bake for 35–40 minutes or until a toothpick inserted into the center comes out mostly clean with a few fudgy crumbs.
- Cool and Serve: Let cool completely before slicing.
Notes
- For extra minty flavor, use mint chocolate chips or a few drops of green food coloring in the fudge layer.
- Chill before slicing for cleaner cuts.
