Ingredients

  • 1/2 cup diced cucumber
  • 1/2 cup diced avocado
  • 1/4 cup chopped cilantro
  • 1 jalapeño, finely diced (optional)
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. In a large bowl, combine tomato juice, ketchup, and lime juice. Stir to mix.
  2. Add the cooked shrimp, red onion, cucumber, avocado, cilantro, and jalapeño if using.
  3. Gently toss to coat the shrimp and vegetables in the sauce.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled with tortilla chips on the side.

Notes

  • Use freshly cooked shrimp for the best flavor.
