- 1 pound cooked shrimp, peeled and deveined
- 1 cup tomato juice
- 1/2 cup ketchup
- 1/4 cup fresh lime juice
- 1/4 cup chopped red onion
- 1/2 cup diced cucumber
- 1/2 cup diced avocado
- 1/4 cup chopped cilantro
- 1 jalapeño, finely diced (optional)
- Salt and pepper, to taste
- Tortilla chips, for serving
Instructions
- In a large bowl, combine tomato juice, ketchup, and lime juice. Stir to mix.
- Add the cooked shrimp, red onion, cucumber, avocado, cilantro, and jalapeño if using.
- Gently toss to coat the shrimp and vegetables in the sauce.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled with tortilla chips on the side.
Notes
- Use freshly cooked shrimp for the best flavor.
- Adjust the spiciness by adding more or less jalapeño.
- For a thinner cocktail sauce, add a splash more tomato juice.
