For the Tacos:

  • 8 small soft flour tortillas
  • 1 tablespoon olive oil
  • 1/4 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • Pickles (optional)
  • Chopped onions (optional)
  • 1/2 cup salsa or taco sauce (optional)


Instructions

  1. Prepare the Burgers: Preheat a grill or skillet over medium heat. In a bowl, mix the ground beef with garlic powder, onion powder, salt, and black pepper. Form the mixture into 4 equal-sized burger patties. Place shredded cheddar cheese on top of each patty, then cook for 3-4 minutes per side or until the burgers are fully cooked and the cheese has melted. Remove from heat and set aside.
  2. Prepare the Mac & Cheese: Cook the elbow macaroni according to the package instructions until al dente. Drain well and set aside. In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute to create a roux. Slowly whisk in the milk, stirring constantly until the sauce begins to thicken, about 3-4 minutes. Add the shredded cheddar cheese, garlic powder, salt, and black pepper, stirring until the cheese fully melts and the sauce is smooth. Mix in the cooked macaroni, coating it completely with the cheese sauce. Remove from heat and set aside.
  3. Assemble the Tacos: Warm the flour tortillas in a dry skillet or microwave until they are soft and pliable. Lightly brush each tortilla with olive oil to add a subtle crispness. Spoon a generous portion of mac & cheese into the center of each tortilla, then top with one burger patty. Add shredded lettuce, diced tomatoes, and optional pickles and chopped onions for garnish.
