Instructions
- Beat Butter and Sugar: Beat the softened butter and 3/4 cup confectioner’s sugar together until light and fluffy. After the sugar is fully incorporated, continue to beat the mixture on high speed for 4 minutes to achieve a creamy and airy texture.
- Add Vanilla: Mix in the vanilla extract and beat until evenly combined, infusing the dough with a pleasant aroma.
- Incorporate Dry Ingredients: Add the all-purpose flour, cornstarch, and salt to the butter mixture. Beat the ingredients together until the dough is well incorporated and smooth.
- Divide Dough: Separate the dough evenly into 3 portions for easier handling and shaping.
- Shape Logs and Chill: Roll each dough portion into logs about 1 inch in diameter. Wrap each log tightly with plastic wrap and refrigerate for 1 hour to firm up the dough.
- Slice and Chill: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Remove one log from the fridge at a time, unwrap, and slice into 1 inch thick cookies. Arrange the slices on the baking sheet, leaving 1 inch of space between them. Refrigerate the sliced cookies for 30 minutes to help maintain their shape during baking.
- Bake: Bake in the preheated oven for about 8 minutes, or until the bottoms of the cookies are just starting to turn light brown, ensuring a tender texture without overbaking.
- Cool and Dust: Remove the baking sheet from the oven and let the cookies cool for 3 minutes on the pan. Transfer the cookies to a wire rack to cool completely. Once cooled, dust the tops generously with additional confectioner’s sugar for a classic Melting Moment finish.
