Description

Instructions

  1. Beat Butter and Sugar: Beat the softened butter and 3/4 cup confectioner’s sugar together until light and fluffy. After the sugar is fully incorporated, continue to beat the mixture on high speed for 4 minutes to achieve a creamy and airy texture.
  2. Add Vanilla: Mix in the vanilla extract and beat until evenly combined, infusing the dough with a pleasant aroma.
  3. Incorporate Dry Ingredients: Add the all-purpose flour, cornstarch, and salt to the butter mixture. Beat the ingredients together until the dough is well incorporated and smooth.
  4. Divide Dough: Separate the dough evenly into 3 portions for easier handling and shaping.
  5. Shape Logs and Chill: Roll each dough portion into logs about 1 inch in diameter. Wrap each log tightly with plastic wrap and refrigerate for 1 hour to firm up the dough.
  6. Slice and Chill: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Remove one log from the fridge at a time, unwrap, and slice into 1 inch thick cookies.
