Ingredients
Scale
Salmon
- 4 salmon fillets (6 oz each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
Sauce
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the salmon: Pat the salmon fillets dry and season both sides with salt and pepper to enhance the flavor.
- Sear the salmon: Heat olive oil in a large skillet over medium heat. Place the salmon fillets skin side down and cook for 4 to 5 minutes until golden brown. Flip and sear the other side for another 4 to 5 minutes. Remove the fillets from the skillet and set aside.
- Sauté garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until aromatic but not browned.
- Deglaze with chicken broth: Pour the chicken broth into the skillet and scrape the bottom to release any browned bits. Let it simmer for 2 to 3 minutes to reduce slightly.
- Add sauce ingredients: Stir in the heavy cream, grated parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes if using. Allow the sauce to simmer gently for 3 to 4 minutes until it thickens.
- Return salmon to skillet: Place the seared salmon fillets back into the skillet and spoon the sauce over them. Let everything simmer together for 2 to 3 minutes to warm through and meld flavors.
- Garnish and serve: Sprinkle the chopped fresh parsley on top for brightness, then serve immediately with your favorite side dishes.
Notes
- Ensure the skillet is properly heated before searing the salmon to get a nice golden crust.
- Do not overcook the salmon; it should remain moist and tender inside.
- Sun-dried tomatoes add a sweet and tangy depth to the sauce, but you can substitute with fresh tomatoes if needed.
- Red pepper flakes are optional; omit if you prefer a milder sauce.
- Serve with steamed vegetables, rice, or crusty bread to soak up the sauce.
