These Maraschino Cherry Chocolate Chip Cookies are soft, chewy, and filled with gooey chocolate chips and sweet cherry bits in every bite. With a pretty pink color and bursts of flavor, they’re perfect for Valentine’s Day, parties, or whenever you’re craving a fun treat!
Ingredients

1/2 cup (1 stick) unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1/2 tsp vanilla extract

1/4 tsp almond extract (optional, enhances cherry flavor)

1 1/2 cups all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup chopped maraschino cherries (blotted dry)

1/2 cup mini or regular semi-sweet chocolate chips

1-2 tbsp maraschino cherry juice (for color and flavor)
Instructions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, cream together butter and sugar until light and fluffy.

Beat in the egg, vanilla, almond extract (if using), and cherry juice until combined.

In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients and mix until a soft dough forms.

Fold in chopped maraschino cherries and chocolate chips.

Scoop dough by rounded tablespoons onto the prepared baking sheet.

Bake for 10–12 minutes, or until edges are set and centers are still soft.

Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes

Blot cherries well with paper towels to prevent soggy cookies.

Add a few extra chocolate chips on top before baking for a bakery-style look.
