Description

Refreshing and creamy Mango Lassi Popsicles that combine ripe mangoes, Greek yogurt, and a touch of homemade simple syrup. This delightful frozen treat captures the classic Indian mango lassi flavors in an easy-to-make popsicle form, perfect for cooling off on warm days.

Ingredients

Scale

Mango Mixture

  • 2 large mangoes, peeled and chopped
  • 1 tablespoon homemade simple syrup
  • 1/3 cup Greek yogurt
  • 1/3 cup homemade simple syrup (for mixing with mango puree and yogurt)

Yogurt Mixture

  • 2/3 cup Greek yogurt
  • 2/3 cup homemade simple syrup

Instructions

  1. Prepare the Mango Puree: Peel and chop the mangoes, then blend them with 1 tablespoon of homemade simple syrup until smooth and creamy.
  2. Mix Mango and Yogurt Mixture: In a bowl, mix one-third of the Greek yogurt with the mango puree and one-third of the homemade simple syrup. In a separate bowl, whisk together the remaining two-thirds of the Greek yogurt and two-thirds of the simple syrup until smooth.
  3. Assemble Popsicles: Alternate spooning layers of the mango-yogurt mixture and the plain yogurt mixture into popsicle molds to create a swirled effect.
  4. Freeze: Place the molds in the freezer and allow the popsicles to freeze solid for 4 to 5 hours.
  5. Serve: To release the popsicles, run the molds under warm water for a few seconds and gently pull out the popsicles. Enjoy your refreshing mango lassi popsicles!

Notes

  • Use ripe mangoes for the best flavor and natural sweetness.
  • Adjust the amount of simple syrup depending on the sweetness of your mangoes and personal preference.
  • For a dairy-free version, substitute Greek yogurt with coconut yogurt.
  • Be sure to freeze the popsicles until completely solid for best texture and easy removal.
  • You can prepare the mixtures ahead of time and assemble right before freezing.
