Instructions
- Prepare the Chicken: Season the chicken breasts evenly on both sides with salt and pepper to enhance the flavor before cooking.
- Heat the Oil: Warm 1 tablespoon of olive oil in a large skillet over medium-high heat, preparing it to sear the chicken.
- Cook the Chicken: Place the chicken breasts in the hot skillet and cook for 6-7 minutes per side until they develop a golden brown crust and are cooked through. Remove from skillet and set aside.
- Prepare the Mango Chutney Sauce: In the same skillet, add mango chutney, chicken broth (or water), lime juice if using, ground ginger, turmeric, and red pepper flakes. Stir the mixture well and bring it to a simmer, cooking for 3-4 minutes until the sauce thickens slightly and melds the flavors.
