Maine Potato Candy is an old-fashioned no-bake treat made with mashed potatoes, powdered sugar, and peanut butter. It might sound odd at first, but the potato adds moisture and helps form a sweet dough that’s rolled out and filled with creamy peanut butter. This nostalgic candy is a regional favorite in Maine and perfect for holiday trays or anytime you’re craving something sweet and simple.

1 small russet potato (about 1/3 to 1/2 cup mashed)

4-6 cups powdered sugar, sifted

1 tsp vanilla extract (optional)

1/2 cup creamy peanut butter
Instructions

Cook the potato: Peel and boil the potato until soft, then mash it well with a fork or potato masher. Let cool completely.

Make the dough: In a mixing bowl, combine mashed potato and vanilla (if using). Add powdered sugar, one cup at a time, stirring until a dough forms. The dough should be firm but pliable, not sticky. You may not need all 6 cups of sugar.

Roll it out: Dust a clean surface with powdered sugar and roll the dough into a rectangle about 1/4 inch thick.

Add peanut butter: Spread peanut butter evenly over the dough, leaving a small border around the edges.

Roll it up: Starting from one long edge, gently roll the dough into a log, just like a jelly roll.

Chill and slice: Wrap the log in plastic wrap and refrigerate for 1–2 hours, or until firm. Slice into 1/4-inch rounds to serve.
Notes
Only use a small amount of mashed potato. Too much will make the dough too sticky.
This candy is best stored in the fridge and eaten within 5–7 days.
You can use almond butter or sunbutter as a peanut-free option.
