Description

This low carb sausage and kale soup is a warm and satisfying dish perfect for keto and low-carb diets. Made with spicy sausage, tender kale, and a creamy, flavorful broth, it’s a comforting one-pot meal for any time of year.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon dried oregano
  • 4 cups chopped kale, stems removed
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  2. Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 1 more minute.
  3. Pour in chicken broth and bring to a simmer. Add red pepper flakes and oregano. Simmer for 10–15 minutes.
  4. Stir in heavy cream and chopped kale. Cook for another 5–7 minutes, or until kale is tender.
  5. Season with salt and pepper to taste. Serve hot with Parmesan cheese if desired.

Notes

  • Use ground turkey or chicken sausage for a lighter option.
  • Substitute spinach for kale if preferred, adding it at the end to avoid overcooking.
  • This soup stores well and tastes even better the next day.
