Ingredients
Scale
Chicken Filling
- 2 cups Cooked Chicken Breast (Shredded)
- 3 cloves Minced Garlic
- 4 oz Cream Cheese (Softened)
- 1 cup Shredded Mozzarella Cheese (Freshly shredded)
- 1 cup Shredded Cheddar Cheese
- 2 tbsp Fresh Parsley (Chopped)
- to taste Salt
- to taste Pepper
- 1 cup Baby Spinach (Optional)
Wrap and Cooking
- 4 pieces Low-carb Tortillas (Recommended brand: Mission Carb Balance)
- 2 tbsp Olive Oil (For frying)
Instructions
- Prepare the Skillet: Preheat a skillet or grill pan over medium heat and add a drizzle of olive oil to prevent sticking and to prepare for frying the wraps.
- Warm the Tortillas: Microwave the low-carb tortillas for 10-15 seconds to make them pliable and easier to roll without cracking.
- Make the Filling: In a mixing bowl, combine the shredded cooked chicken, shredded mozzarella, shredded cheddar, softened cream cheese, minced garlic, chopped parsley, salt, pepper, and baby spinach if using. Mix thoroughly to combine all ingredients evenly.
- Assemble the Wraps: Divide the filling into four equal portions, about 1/2 cup each. Lay each warmed tortilla flat and spread the filling over it, then roll tightly, folding in the sides to secure the filling.
- Cook the Wraps: Place the rolled wraps seam-side down on the preheated skillet. Cook for 2-3 minutes on each side or until the tortillas are golden brown and crispy, and the cheese inside melts.
- Serve: Remove from the skillet, slice each wrap diagonally in half, and serve hot for a delicious, cheesy, and low-carb meal.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the filling.
- Serve with a side salad for a more balanced meal.
- Make sure the cream cheese is softened to ensure easy mixing.
- Use fresh shredded cheese rather than pre-shredded for better melting results.
- These wraps can be stored in the refrigerator and reheated in a skillet or microwave.
