Description

This Loaded Baked Potato with Steak Bites recipe combines hearty, tender baked russet potatoes with juicy seasoned steak cubes, topped with cheddar cheese, crispy bacon, sour cream, and fresh green onions. Perfect as a satisfying main dish, this flavorful meal offers a great balance of textures and rich flavors for a comforting dinner.

Ingredients

Scale

Potatoes

  • 4 large russet potatoes

Steak Bites

  • 1 lb ribeye or sirloin steak, cut into bite-sized cubes
  • 2 tbsp olive oil (for cooking the steak)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste

Toppings

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon bits or crumbled bacon
  • 1/2 cup sour cream
  • 2 tbsp green onions or chives, chopped

Instructions

  1. Bake the Potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean, then poke a few holes in each potato with a fork. Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  2. Cook the Steak Bites: While the potatoes are baking, heat the olive oil in a skillet over medium-high heat. Season the steak cubes with garlic powder, onion powder, salt, and pepper. Add the steak bites to the skillet and cook for 4-5 minutes, turning occasionally, until they’re browned and cooked to your desired level of doneness. Remove from heat and set aside.
  3. Prepare the Toppings: While the steak cooks, shred the cheddar cheese, cook and crumble the bacon if not already done, and chop the green onions or chives.
  4. Assemble the Loaded Potatoes: Once the potatoes are done, cut a slit down the center of each potato and gently fluff the insides with a fork. Top each potato with a spoonful of sour cream, a sprinkle of shredded cheddar cheese, some steak bites, crumbled bacon, and a garnish of green onions or chives.
  5. Serve and Enjoy: Serve the loaded baked potatoes hot for a hearty and flavorful meal that combines tender potato with savory steak and tasty toppings.

Notes

  • Make sure the potatoes are fully cooked and tender before assembling.
  • Adjust steak doneness according to personal preference.
  • You can substitute sour cream with Greek yogurt for a healthier alternative.
  • Use leftover steak or prepared steak bites to save time.
  • For a spicier kick, add some diced jalapeños or a dash of hot sauce to the toppings.
