Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 3 cloves garlic, minced

  • 1 cup chicken broth

  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)

  • Zest of 1 lemon

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove the chicken from the skillet and set aside.

 

Make the Lemon Butter Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.

 

Add Liquids: Pour in the chicken broth and lemon juice, scraping up any bits from the bottom of the pan. Bring the mixture to a simmer and cook for 3-4 minutes, until it reduces slightly.

 

Finish the Sauce: If using, stir in the heavy cream and lemon zest, and simmer for another 2 minutes until the sauce thickens slightly. Season with salt and pepper to taste.
