Rice & Soup Mixture

  • 2 cups Minute Rice (white or brown)
  • 1 can cream of mushroom soup (about 10.5 oz)
  • 1 can cream of chicken soup (about 10.5 oz)
  • 1 can water (use the empty soup can to measure)
  • 1 envelope Lipton Onion Soup Mix (about 1 oz)
  • 1 tbsp butter (for greasing the baking dish)


Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with the tablespoon of butter to prevent sticking and enhance flavor.
  2. Mix the Rice and Soups: In a large mixing bowl, combine 2 cups of Minute Rice with the cream of mushroom soup, cream of chicken soup, and one can of water. Stir thoroughly until all ingredients are well incorporated.
  3. Assemble the Casserole Base: Pour the rice and soup mixture into the prepared baking dish, spreading it out evenly for a uniform layer.
  4. Add the Chicken and Seasoning: Place the boneless skinless chicken breasts evenly on top of the rice mixture. Sprinkle the entire surface with the Lipton Onion Soup Mix to add a savory onion flavor.
  5. Bake the Casserole: Cover the baking dish with aluminum foil to keep moisture in and bake in the preheated oven for 1 to 1½ hours, or until the chicken is fully cooked and the rice is tender. The chicken should reach an internal temperature of 165°F (74°C).
