Rice & Soup Mixture
- 2 cups Minute Rice (white or brown)
- 1 can cream of mushroom soup (about 10.5 oz)
- 1 can cream of chicken soup (about 10.5 oz)
- 1 can water (use the empty soup can to measure)
- 1 envelope Lipton Onion Soup Mix (about 1 oz)
- 1 tbsp butter (for greasing the baking dish)
Instructions
- Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with the tablespoon of butter to prevent sticking and enhance flavor.
- Mix the Rice and Soups: In a large mixing bowl, combine 2 cups of Minute Rice with the cream of mushroom soup, cream of chicken soup, and one can of water. Stir thoroughly until all ingredients are well incorporated.
- Assemble the Casserole Base: Pour the rice and soup mixture into the prepared baking dish, spreading it out evenly for a uniform layer.
- Add the Chicken and Seasoning: Place the boneless skinless chicken breasts evenly on top of the rice mixture. Sprinkle the entire surface with the Lipton Onion Soup Mix to add a savory onion flavor.
- Bake the Casserole: Cover the baking dish with aluminum foil to keep moisture in and bake in the preheated oven for 1 to 1½ hours, or until the chicken is fully cooked and the rice is tender. The chicken should reach an internal temperature of 165°F (74°C).
