Description

This Keto Tuscan Soup is a rich and creamy low-carb version of the Italian classic, made with sausage, spinach, sun-dried tomatoes, and a flavorful garlic cream broth. It’s perfect for a satisfying and hearty keto-friendly meal.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tablespoon olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (packed in oil), chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 cups fresh spinach (or kale)
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese (optional, for added richness)

Instructions

  1. In a large pot or Dutch oven, cook sausage over medium heat until browned and cooked through. Remove excess grease if necessary, leaving about 1 tablespoon in the pot.
  2. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  3. Stir in chopped sun-dried tomatoes and cook for another minute.
  4. Pour in the chicken broth and bring to a simmer. Stir in Italian seasoning and red pepper flakes, if using.
  5. Reduce heat to low and stir in heavy cream. Simmer for 5 minutes.
  6. Add spinach and cook until wilted, about 1–2 minutes.
  7. Stir in Parmesan cheese (if using) and season with salt and pepper to taste.
  8. Serve hot, garnished with extra cheese or a drizzle of olive oil if desired.

Notes

  • Use kale instead of spinach for a heartier green.
  • For a dairy-free version, substitute coconut cream and skip the Parmesan.
