This Keto Tuscan Soup is a rich and creamy low-carb version of the Italian classic, made with sausage, spinach, sun-dried tomatoes, and a flavorful garlic cream broth. It’s perfect for a satisfying and hearty keto-friendly meal.

- 1 lb Italian sausage (mild or spicy)
- 1 tablespoon olive oil (if needed)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes (packed in oil), chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- 4 cups fresh spinach (or kale)
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese (optional, for added richness)
Instructions
- In a large pot or Dutch oven, cook sausage over medium heat until browned and cooked through. Remove excess grease if necessary, leaving about 1 tablespoon in the pot.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- Stir in chopped sun-dried tomatoes and cook for another minute.
- Pour in the chicken broth and bring to a simmer. Stir in Italian seasoning and red pepper flakes, if using.
- Reduce heat to low and stir in heavy cream. Simmer for 5 minutes.
- Add spinach and cook until wilted, about 1–2 minutes.
- Stir in Parmesan cheese (if using) and season with salt and pepper to taste.
- Serve hot, garnished with extra cheese or a drizzle of olive oil if desired.
Notes
- Use kale instead of spinach for a heartier green.
- For a dairy-free version, substitute coconut cream and skip the Parmesan.
- Leftovers can be stored in the fridge for up to 4 days and reheated gently.
