Ingredients
Scale
Cake
- 1 cup of crushed pineapple
- ½ cup of pineapple juice
- ½ cup of butter
- 1 cup of sugar
- 1 teaspoon of vanilla extract
- 3 eggs
- ½ cup of milk
- 1 ½ cups of all-purpose flour
- 1 teaspoon of baking powder
- Pinch of salt
Glaze & Decoration
- ½ cup of condensed milk
- Additional pineapple juice (for mixing with condensed milk for glaze, approximately 2 tablespoons)
- Pineapple chunks (for decoration)
Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan to prevent sticking during baking.
- Cream Butter and Sugar: In a mixing bowl, beat the butter and sugar together until the mixture becomes light and fluffy, which helps create a tender cake texture. Add the eggs one at a time, ensuring each egg is fully incorporated before adding the next, then mix in the vanilla extract for flavor.
- Combine Dry Ingredients: In a separate bowl, mix all-purpose flour, baking powder, and a pinch of salt. Gradually add this dry mixture to the wet ingredients while alternately adding milk, stirring gently until a smooth batter forms.
- Add Pineapple and Juice: Fold in the crushed pineapple and pineapple juice gently to keep the batter light and moist.
- Pour and Bake: Pour the prepared batter into the greased cake pan and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Apply Glaze: Once baked, use a skewer or fork to poke small holes evenly throughout the cake. Mix condensed milk with pineapple juice to make the glaze, then pour it over the warm cake to soak into the holes, adding extra moisture and sweetness.
- Decorate and Cool: Decorate the top of the cake with fresh pineapple chunks. Allow the cake to cool completely before serving to let the flavors meld and the glaze set.
Notes
- Use ripe pineapple for the best flavor and sweetness.
- Ensure the cake is completely cooled before slicing to maintain its juicy texture.
- You can substitute whole milk with a dairy-free alternative if desired.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a lighter glaze, adjust the quantity of condensed milk and pineapple juice to taste.
