- 1 tablespoon olive oil
- 1 lb Italian sausage (mild or spicy), casings removed
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can white beans (cannellini or great northern), drained and rinsed
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 2 cups chopped kale or spinach (optional)
- Grated Parmesan cheese, for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and fully cooked. Drain excess fat if needed.
- Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
- Stir in garlic and cook for 1 more minute until fragrant.
- Add diced tomatoes, white beans, chicken broth, oregano, thyme, and red pepper flakes if using. Bring to a boil.
- Reduce heat and simmer uncovered for 20–25 minutes to allow flavors to meld.
- Stir in kale or spinach if using, and cook for another 2–3 minutes until wilted.
- Season with salt and pepper to taste. Serve hot, topped with grated Parmesan if desired.
Notes
- For a thicker stew, mash a few beans into the broth or simmer longer uncovered.
- Use turkey or chicken sausage for a leaner option.
- Pairs well with crusty bread or over a bed of cauliflower rice for a low-carb version.
