  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can white beans (cannellini or great northern), drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 cups chopped kale or spinach (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and fully cooked. Drain excess fat if needed.
  2. Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
  3. Stir in garlic and cook for 1 more minute until fragrant.
  4. Add diced tomatoes, white beans, chicken broth, oregano, thyme, and red pepper flakes if using. Bring to a boil.
  5. Reduce heat and simmer uncovered for 20–25 minutes to allow flavors to meld.
  6. Stir in kale or spinach if using, and cook for another 2–3 minutes until wilted.
  7. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan if desired.

  • For a thicker stew, mash a few beans into the broth or simmer longer uncovered.
  • Use turkey or chicken sausage for a leaner option.
