Ingredients

Scale

Seafood Filling

  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 cup small cooked shrimp, chopped
  • 1/2 cup lump crab meat (fresh or canned, drained)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup diced tomatoes (optional)
  • 2 tablespoons diced jalapeños (optional for heat)
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped green onions (for garnish)

Biscuit Base

  • 1 can (8 count) refrigerated biscuit dough

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Sauté Seafood: In a skillet over medium heat, melt the butter. Add minced garlic and cook for about 30 seconds until fragrant, then add the chopped shrimp and crab meat. Cook for 2 minutes to warm the seafood and blend flavors, then remove from heat.
  3. Mix Filling: In a medium bowl, combine the sautéed seafood mixture with softened cream cheese, shredded cheddar cheese, sour cream, diced tomatoes, jalapeños, Old Bay seasoning, salt, and black pepper. Stir until all ingredients are thoroughly mixed, creating a creamy, flavorful filling.
  4. Prepare Biscuits: Separate the refrigerated biscuit dough into individual biscuits. Flatten each biscuit into approximately a 4-inch round on a clean surface.
  5. Assemble Melts: Spoon 1 to 2 tablespoons of the seafood mixture onto the center of half of the flattened biscuit rounds. Place the remaining biscuit rounds on top and carefully pinch the edges together to seal, forming stuffed biscuit melts. Press gently to slightly flatten them.
  6. Bake: Arrange the stuffed biscuit melts on the prepared baking sheet. Bake in the preheated oven for 13 to 15 minutes, or until the biscuits are golden brown and cooked through.
  7. Serve: Allow the melts to cool slightly. Garnish with chopped green onions and serve warm. Optionally, offer extra sour cream or salsa on the side for dipping.

Notes

  • For a spicier version, increase the amount of jalapeños or add a dash of hot sauce to the filling.
  • Make sure to drain canned crab meat well to avoid excess moisture in the filling.
  • These melts can be assembled ahead of time and refrigerated until ready to bake.
  • Serve with a fresh salsa or guacamole for added flavor contrast.
  • If you don’t have refrigerated biscuit dough, homemade biscuit dough can be used as an alternative.
