- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 1 pound ground beef or beef/pork mix
- 1/2 cup dry white wine
- 1 (28 oz) can crushed tomatoes
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 1/4 cup milk or cream (optional)
Instructions
- Turn on Instant Pot to Sauté and heat olive oil.
- Add onion, carrot, and celery; cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute.
- Add ground meat and cook until browned, breaking it up with a spoon.
- Pour in wine and deglaze the pot. Let it simmer until mostly reduced.
- Add crushed tomatoes, tomato paste, broth, herbs, bay leaf, salt, and pepper.
- Close lid, set to Pressure Cook on high for 15 minutes.
- Allow natural pressure release for 10 minutes, then quick release.
- Stir in milk or cream if using. Adjust seasoning and serve.
Notes
- Use a mix of ground beef and pork for deeper flavor.
- Deglazing with wine enhances the sauce, but you can skip it or substitute broth.
- Letting the sauce rest enhances the taste.
- Great for freezing and reheating.
