Description

A rich, flavorful Bolognese sauce made effortlessly in the Instant Pot, perfect for quick yet satisfying meals.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 pound ground beef or beef/pork mix
  • 1/2 cup dry white wine
  • 1 (28 oz) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/4 cup milk or cream (optional)

Instructions

  1. Turn on Instant Pot to Sauté and heat olive oil.
  2. Add onion, carrot, and celery; cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Add ground meat and cook until browned, breaking it up with a spoon.
  5. Pour in wine and deglaze the pot. Let it simmer until mostly reduced.
  6. Add crushed tomatoes, tomato paste, broth, herbs, bay leaf, salt, and pepper.
  7. Close lid, set to Pressure Cook on high for 15 minutes.
  8. Allow natural pressure release for 10 minutes, then quick release.
  9. Stir in milk or cream if using. Adjust seasoning and serve.

Notes

  • Use a mix of ground beef and pork for deeper flavor.
  • Deglazing with wine enhances the sauce, but you can skip it or substitute broth.
  • Letting the sauce rest enhances the taste.
  • Great for freezing and reheating.
