For the Cranberry Puree:
- 1 cup fresh or frozen cranberries
- 1/2 cup water
- 1/4 cup sugar
For the Bellinis:
- 1 bottle Prosecco, chilled
- Fresh cranberries, for garnish
- Rosemary sprigs, for garnish
Instructions
- Make the Cranberry Puree: In a small saucepan, combine the cranberries, water, and sugar. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes. Remove from heat and let cool.
- Assemble the Bellinis: Spoon a tablespoon of cranberry puree into the bottom of each champagne flute. Top with chilled Prosecco and gently stir to combine. Garnish with fresh cranberries and a sprig of rosemary. Serve immediately and enjoy!
