Description

Flaky buttermilk biscuits filled with crispy fried chicken tenders and drizzled with spicy-sweet hot honey, perfect for brunch or a comforting meal.


Ingredients

  • 1 1/2 lb chicken tenders or sliced chicken breasts
  • 1 1/2 cups all-purpose flour (for dredging)
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 large egg
  • 2 tbsp water
  • Oil for frying
  • 2 cups all-purpose flour (for biscuits)
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • 1/4 tsp baking soda
  • 1/2 cup cold butter, cubed
  • 3/4 cup buttermilk
  • 1/4 cup melted butter (for brushing)
  • 1 cup honey
  • 2 tsp red pepper flakes
  • 1 tbsp apple cider vinegar
  • Pickle slices (optional)

Instructions

  1. In a bowl, mix 1 1/2 cups flour, salt, pepper, garlic powder, and smoked paprika.
  2. Whisk egg and water in another bowl.
  3. Dredge chicken in flour mixture, then egg, then flour again.
  4. Heat oil to 365–375°F and fry chicken until golden and cooked through, 8–10 minutes. Drain on paper towels.
  5. Preheat oven to 450°F and prepare a baking sheet.
  6. In a bowl, whisk 2 cups flour, baking powder, salt, and baking soda. Cut in cold butter until crumbly.
  7. Stir in buttermilk to form dough. Pat out and fold dough 3 times, then roll to 1/2 inch thick and cut biscuits.
  8. Bake 15–17 minutes or until golden. Brush tops with melted butter.
  9. For hot honey, combine honey and red pepper flakes in a saucepan. Warm gently, then stir in vinegar and let cool.
  10. To serve, split biscuits, add fried chicken, drizzle with hot honey, and add pickles if using.

  • Use a thermometer to maintain oil temperature while frying.
  • Layering biscuit dough creates flakiness.
  • Hot honey can be made in advance and stored.
  • Add more pepper flakes for extra heat.
  • Use full-fat buttermilk for the best biscuit flavor.
