Description

Honeycrisp Salad is a fresh, crisp, and flavorful salad featuring sweet Honeycrisp apples, crunchy nuts, creamy cheese, and a tangy vinaigrette. It’s perfect for fall or any time you want a refreshing yet hearty salad.

Ingredients

Units Scale
  • 6 cups mixed greens (such as spinach, arugula, or romaine)
  • 2 Honeycrisp apples, thinly sliced
  • 1/2 cup candied pecans or walnuts
  • 1/3 cup dried cranberries
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled goat cheese or feta
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.
  2. In a large salad bowl, combine mixed greens, sliced Honeycrisp apples, candied pecans, cranberries, and red onion.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Top with crumbled goat cheese or feta before serving.

Notes

  • To prevent apples from browning, toss them in a bit of lemon juice before adding to the salad.
  • Add grilled chicken to make it a full meal.
  • Can be made ahead—store dressing separately and toss before serving.
