Description

A crisp and refreshing salad featuring sweet Honeycrisp apples, tangy feta cheese, and crunchy walnuts, tossed in a light vinaigrette.

Ingredients

Units Scale
  • 2 Honeycrisp apples, thinly sliced
  • 5 oz mixed greens or arugula
  • 1/2 cup crumbled feta cheese
  • 1/3 cup chopped walnuts or pecans
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
  2. In a large salad bowl, combine the mixed greens, apple slices, feta cheese, walnuts, and dried cranberries.
  3. Drizzle the vinaigrette over the salad just before serving.
  4. Toss gently to combine and serve immediately.

Notes

  • Toast the walnuts for extra flavor and crunch.
  • Add grilled chicken to make it a main dish.
  • Use pear instead of apple for variation.
  • Best served fresh to keep apples from browning.
