- 2 tbsp honey

- Fresh parsley or dill for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss carrots with olive oil, honey, salt, pepper, and thyme (if using) until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, turning once halfway through, until carrots are tender and caramelized at the edges.
- Transfer to a serving platter and garnish with fresh herbs if desired. Serve warm.
